My biggest issue was figuring out what to do about the lobster meat. I wrote up my plan and made a list of what ingredients I needed to pick up… oh plus those needed for the special anniversary dessert which you’ll have to wait to see. The least I could do is make something special for him on our special day. The Mr is a big fan of seafood and I’m not, so we never eat it at home. Plus, I had a special occasion I really wanted to make it for… our 7th wedding anniversary! Making a pasta dish couldn’t possibly be that labor intensive. So I had just had a baby…I didn’t care, it wouldn’t stop me. I got this particular idea stuck in my head again and couldn’t let it slide. This year I had intended on making a lobster dish or two over the summer, but yeah… that didn’t happen. I’m pretty sure last year I planned on making it once or twice but it never happened and eventually I forgot about it.
